These cookie dough vegan ice cream sandwiches are going to rock your world. Trust me when I say you cannot tell they’re gluten-free, naturally sweetened with pure maple syrup, nut-free, and vegan! Easy no-bake recipe that’s perfect for a healthy freezer dessert. Just 8 simple ingredients!

Ingredients

  • 1 flax egg (1 Tbs. ground flax + 2 Tbs. water. Stir and let thicken 3-5 minutes.)
  • ½ cup melted vegan butter (or grass-fed butter)
  • ½ cup + 2 Tbs. pure maple syrup or honey
  • 2 tsp. vanilla extract
  • 1¾ cups gluten-free flour (must contain xanthan gum. See note 1 for how to heat treat)
  • ⅛ tsp. pink Himalayan salt
  • ½ cup mini dairy-free chocolate chips (my favorite brand)
  • 20 fl. oz (about 2½ cups) vanilla non-dairy ice cream (You can use any non-dairy or dairy ice cream you prefer!)

Instructions

  1. Line a rimmed baking sheet with parchment paper and ensure there is space in your freezer for it.
  2. In a medium bowl or stand mixer, add the flax egg, melted vegan butter, maple syrup, and vanilla extract. Mix until combined.
  3. Next, add in the heat treated (see note 1 for how to do this) gluten-free flour and pink salt. Mix until a dough forms. Fold in the mini chocolate chips then transfer cookie dough to parchment-lined baking sheet.
  4. Place another piece of parchment paper on top of the cookie dough and flatten with your hands until it’s ¼ inch thick and shaped into a 15x12 inch rectangle. Keep top parchment paper on cookie dough and freeze for at least 40 minutes or until firm (this cookie dough will stay pretty soft all the time in the freezer so giving it at least 40 minutes to chill will help with the assembly of the ice cream sandwiches).
  5. Transfer cookie dough to cutting board and slice down the center vertically. Scoop ice cream on one half and spread into an even layer. Then gently place the other half of the cookie dough on top. Transfer back to baking sheet and freeze for 4 hours or overnight.
  6. Slice into any size squares you prefer and serve (I made medium size sandwiches and this made 18 cookie dough ice cream sandwiches). Enjoy! The cookie dough will remain soft and ready to eat straight from the freezer which is delicious. Store in the freezer in an airtight container or resealable bag for up to 5 months.

Notes

  1. Heat Treat Your Flour: You can do this in the oven or microwave.

Oven: Preheat oven to 350 F. Spread the gluten-free flour on a rimmed baking sheet in a thin layer. Cook for 5 minutes, then let cool completely before using. You can also store it in an airtight container until ready to use.

Microwave: Place gluten-free flour in a microwave-safe bowl and microwave on high for 30 seconds. Stir flour and continue the process 1 to 2 times until flour has reached a temperature of 165°. Cool completely before using in recipes.

How To Make Vegan Ice Cream Sandwiches

  1. Make the raw eggless cookie dough which is just 7 ingredients. Then flatten it on a parchment-lined baking sheet and pop it in the freezer to harden a bit.
  1. Then cut your cookie dough down the middle and spread dairy-free ice cream or any ice cream of choice on one half of the cookie dough.
  2. Place the other half of the gluten-free cookie dough on top and freeze again until the ice cream is firm (4 hours or overnight).
  3. Cut into squares and enjoy this amazing freezer dessert!

How To Heat Treat Gluten-Free Flour

You can heat-treat raw gluten-free flour in order to make it safe to eat! You can do this in the oven or microwave.

Oven: Preheat oven to 350 degrees F.

Making desserts secretly gluten-free is something I’ve been doing for years now. If you’ve tried my gluten-free millionaire bars, fluffy vegan coffee cake, or my copycat homemade tagalong cookies, you’ll know what I’m talking about. So, when I say these vegan cookie dough ice cream sandwiches are secretly gluten-free, I mean it! No one will be able to tell it’s gluten-free and sweetened with all-natural sweeteners like pure maple syrup or honey.

For this recipe, we use gluten-free all-purpose flour to give the healthy cookie dough the perfect soft and chewy texture while also keeping the ice cream sandwiches nut-free. Usually, I like using a combination of gluten-free flour and another flour when I am baking something, but for this gluten-free cookie dough base, just the gluten-free flour works perfectly. Makes the recipe simple and allergy friendly. Win, win!

My favorite gluten-free all-purpose flour to use for this vegan cookie dough recipe is King Arthur’s Measure For Measure Gluten-free Flour. I also have made these no-bake vegan cookie dough ice cream sandwiches using Cup 4 Cup multi-purpose gluten-free flour as well and it works perfectly! The gluten-free flour you use must contain xanthan gum. You need to find gluten-free flour with xanthan gum, otherwise, these gluten-free ice cream sandwiches will fall apart. You can also add xanthan gum if you have it on hand and your gluten-free flour doesn’t contain it.
