I don’t know about you, but I can have turkey any time of the year. Especially is it’s smoked! There’s just something about smoked turkey, and I swear I can never get enough of it. In this post I’m going to share my recipe for easy smoked turkey. This recipe is so simple. Unlike a lot of other smoked turkey recipes you’ll find that I do NOT do a overnight brine, or any of that other unnecessary stuff. I keep everything easy, and the outcome is amazing! So let’s get to some of the questions that I know that I’ll get asked.

FAQs: How to Make Smoked Turkey!

Easy Smoked Turkey Recipe (3)

How long will it take to smoke a turkey?

Depending on the size of your turkey it will take anywhere from 6-12 hours. I personally smoke my turkey, which is usually around 12-14, at 275 F for about 6-7 hours.

Easy Smoked Turkey Recipe (4)

What temperature should I smoke my turkey?

I noticed that a lot of people use different temperatures. I’ve seen some smoke turkeys at 225F, while others smoke their turkeys at 300 F. I personally smoke my turkeys on my grill at 275 F, and it works for me.

Do you have to brine a turkey?

Heck no! 9 times out of 10 I don’t brine my turkey, and it still comes out flavorful and moist. (If you DO want to brine your turkey, I have a bomb rosemary turkey brine recipe right here!)

Prep Time 20 minutes minutes

Cook Time 11 hours hours

Resting Time 30 minutes minutes

Total Time 11 hours hours 20 minutes minutes

Servings 4 servings

Ingredients

  • 13-15 lb whole turkey everything remove out of the cavity

Turkey Butter

Outside of the turkey

Instructions

  • I start off by doing a "walk around" with the turkey. Meaning I make sure there isn't anything on the turkey that I don't want (excess fat, feathers, and of course I remove everything out of the cavity as well!)

  • Once the turkey is good to go, set it to the side.

  • Now grab a medium sized mixing bowl and add in all the ingredients for the turkey butter.

  • Once the butter, onions, garlic, salt, pepper, red pepper flakes, lemon zest, and olive oil are in the mixing bowl, mix everything until well combined. Set the turkey butter aside.

  • Use your hands or a plastic spatula to loosing the skin on the turkey. Once the skin is loosened, start rubbing the turkey butter under the turkey skin as well as the turkey.

  • Next drizzle the oil all over the turkey, then sprinkle on the kosher salt, coarse black pepper, parsley flakes, and paprika.

  • Rub the turkey down, and make sure that everything is seasoned etc.

  • At this time your grill/smoker should be heated to 275 F.

  • Carefully place the turkey on the grill, and make sure that it's in the middle.

  • Smoke the turkey for 6-7 hours. Be sure to check the internal temperature of the turkey, and it should be at least 165 °F.

  • Let the turkey rest for 30 minutes before cutting into it.

  • Serve and enjoy!

She is using a z-grill which is a pellet grill and it actually has a pan under the grill which leads to a bucket that collects all of the droppings that come off the meat. I think all pellet grill have the bucket but if you don’t have one I recommend getting one. I bought one two weeks ago and I’m obsessed with it and can’t wait ti try this recipe myself ^_^

FAQs

How to smoke a turkey and keep it moist? ›

You can baste or spritz with chicken broth while smoking the turkey to help keep it moist as well as help crisp up that skin. The butter of this recipe will really get that skin crisp, so the spritzing is more to keep it from drying out.

Should you smoke turkey in foil when smoking? ›

SHOULD YOU WRAP TURKEY IN FOIL WHEN SMOKING? Unlike cooking a turkey in an oven, you won't want to wrap your turkey in aluminum foil for smoked turkey. If your turkey's wings are baking too quickly, you can cover them with foil, but otherwise, there's no need.

What are the secrets to smoking a turkey? ›

To recap, the secrets to perfectly smoked turkey are: butterflying, dry-brining, adding baking powder to the dry rub, slow-cooking over indirect heat, and careful monitoring of the turkey's internal temperature.

How long should I smoke a turkey? ›

Low & Slow Smoked Turkey - Smoke your turkey at the low temperature of 225 degrees F for approximately 6-8 hours for a 22 pound turkey. Remove turkey from the brine and pat dry with paper towels (this is an important step, don't skip it).

Should I rub oil on my turkey before smoking? ›

You only need to coat it with oil before placing it on your smoker or grill. However, if you wet brined the turkey, coat its dried body with oil before applying your dry rub. After covering the turkey with your seasonings, insert your oven-safe wireless thermometer into the thickest part of the turkey thigh.

What is the danger zone for smoked turkey? ›

Completely thaw meat or poultry before smoking. Because smoking uses low temperatures to cook food, the meat will take too long to thaw in the smoker, allowing it to linger in the "Danger Zone" (temperatures between 40 and 140 °F) where harmful bacteria can multiply.

How to keep a smoked turkey from turning black? ›

To avoid any mishaps, you should avoid cooking meat over high heat. Smoked meat should be cooked at either a low temperature or a limited amount of time. If the meat is smoked on extremely high heat or for a long time, the meat will burn and turn black. It will also be impossible to consume due to its toughness.

Is it better to smoke a turkey at 225 or 250? ›

The key to a great smoked turkey is indirect heat and consistent temperatures. The goal is to keep your grill temperature at an even 225 degrees F for the duration of the cook. If you're using a gas grill, turn on half of the burners to medium-low and leave the other half off.

How long should turkey sit out before smoking? ›

As you usually do before roasting, let your bird thaw (if frozen) and temper it, which involves setting out a refrigerated bird at room temperature for up to 2 hours. This allows your turkey to attain a uniform temperature inside and out. A cold bird requires a longer smoking time and can lead to uneven cooking.

Why is my smoked turkey rubbery? ›

Why Is My Smoked Turkey Skin Rubbery? Turkey skin stays rubbery if not enough moisture is cooked out of it during the smoking process. The moisture may come from leftover brine.

Should I use a water pan when smoking turkey? ›

Smoking meat low and slow will deliver some great tasting food. But, to ensure that you end up with a good result, it is important to do what you can to keep the meat moist and tender and prevent it from drying out during a long cooking session. This is where a water pan comes in.

Will a turkey dry out in a smoker? ›

Depending on the size of the turkey and how well you control the temperature, you can expect a 14lb turkey to smoke for about 3.5 – 5 hours. The slow cooking and lower temperature help ensure the turkey is not drying out due to excess heat. Remove the turkey when the thermometer reads 155F/68C – 160F/71C.

What is the best flavor to smoke a turkey? ›

Happily, you've got several options here. Cherry wood imparts a slightly sweet flavor that meshes well with turkey (similar to how cranberry sauce makes a great side at Thanksgiving). Pecan does the same thing, except it also has a nutty quality to it.

Can you overcook a turkey in a smoker? ›

One of the benefits of smoking a turkey is that it's almost impossible to overcook anything in a smoker. The temperature remains low and the cooking is slow, resulting in perfectly moist and tender meat with a rich, complex flavor.

When should I pull my turkey off the smoker? ›

Cook the turkey to internal temperatures of 175° F to 180° F in the thigh and 170° F in the breast. Your turkey may take up to 12 hours to cook. When done, remove the turkey from the smoker, protecting your hands with washable mitts or towels, and let stand for 15 minutes before carving.

Should I put a pan of water in my smoker for a turkey? ›

Water is always important… especially when you are trying to achieve a nice smoke ring for your turkey. Humidity plays a key role in this process as well. You can always achieve the temperatures you are trying to smoke at even with water in the water pan.

What should I spray my turkey with while smoking it? ›

I personally like to smoke my turkeys around 275 – 300 degrees for 3 hours. Also, I always recommend spraying the outside of your turkey with cooking spray. This also works to keep the skin crispy and give it that golden-brown color. But to start off with, I always BRINE my turkeys before I smoke them.
