Do you love coconut as much as I do? I feel like once I start eating coconut I want more and more! Coconut fans are going to love this cookie recipe. And the best part is that it is one of the easiest coconut macaroons cookie recipe you can make. It literally is made with only 4 ingredients that you probably already have on hand right now.
COCONUT MACAROONS
These Coconut Macaroons are naturally gluten free so they are one of our go-to too cookies because I have a daughter with Celiac Disease. We can make a big batch of them and throw the leftovers in the freezer and pull them out when she needs a quick treat…or when mom needs something sweet at night after the kids go to bed!
COCONUT CHOCOLATE CHIP COOKIES
I love that you can throw in other types of add ins in this coconut macaroons cookie recipe. If you aren’t a fan of chocolate (weird) then you can simply leave the chocolate chips out and sub in your own favorites. I think cranberries would be delicious in these. Just chop them into smaller pieces that are easy to eat. You can also put in different nuts or add butterscotch chips or white chocolate chips to get the exact combination you want!

HOW TO MAKE COCONUT MACAROONS
You will need the following ingredients to make these coconut macaroons.
- coconut flakes
- sweet and condensed milk
- almonds (optional)
- chocolate chips (optional)
Add all the ingredients into a bowl and then stir to combine them all completely together! That’s it! So easy right?
Then take a cookie scoop and scoop them into equal size cookie balls onto some parchment paper. You will want to use parchment paper when you make these cookies. They will turn out so much better with the parchment paper. Believe me! They don’t come out as well when you use a greased pan or a silicone mat.
Bake at 325 for 12-14 minutes. Let cool on tray. You can also dip the bottoms of these coconut macaroons in some melted chocolate for some extra goodness! Then simply place them back on the parchment paper so the chocolate can harden!

Ingredients
- 114 oz bag sweetened coconut flakes
- 2cupssemi-sweet chocolate chips
- 2/3cupsalted almondschopped
- 1 14oz cansweetened condensed milk regular or fat-free works
Instructions
Preheat the oven to 325F.
Line a large baking sheet with parchment paper and set aside.
In a large bowl combine coconut, chocolate chips, almonds, and sweetened condensed milk.
Stir until combined.
Scoop out dough with a cookie scoop onto prepared baking sheet.
Moisten the tips of your fingers with water and shape into discs. Pat the tops flat.
Bake cookies for 12 to 14 minutes or until tips of coconut are just starting to turn golden brown.
Let cool on a baking sheet.
Store cookies in an airtight container.
Recipe Notes
Parchment paper is critical for these cookies to turn out right. Silicone mats, waxed paper, etc. will yield a slightly different result.
